Because Boulder Sausage is such a lean product, we recommend grilling for 15 to 18 minutes only at medium heat. For best oven cooking, we suggest using the broiler, also requiring 15-18 minutes. Sausage may also be browned in a frying pan and added as an ingredient to your favorite dishes.

1 pkg. Boulder Sausage Mild Or Hot Italian Sausage Links or Bulk
(Can also use Boulder Sausage Cooked Italian Sausage)
1 pkg. ( 1 lb.) Bow tie pasta
3 Tbsp. Olive oil
1 Medium Zucchini, thinly sliced
15 Cherry Tomatoes, halved
1 Medium Onion, sliced into thin wedges
3 garlic cloves, minced
Salt and Pepper to taste
Instructions:
In a large skillet, cook sausage according to the package directions. Meanwhile cook pasta according to package directions. Remove sausage from skillet; cool slightly. Cut into ½ inch slices, and set a side. IN the same skillet, heat olive oil. Add zucchini, cherry tomatoes, onion and garlic. Sauté for 2-3 minutes or until tender. Add Sausage, and heat through. Drain pasta; add sausage mixture. Mix well, and salt and pepper to taste.
Optional Touches:
" add ½ cup of red wine to the vegetables while sautéing.
" Add chopped Red or Green bell peppers.
" Top with shredded Asiago Cheese.
